Storage & Culinary Tips

  • Eggplant can be stored at room temperature for a couple days or stored in the crisper drawer of the fridge for 4-5 days.

  • We grow Asian, Turkish and Italian types of eggplant.  Each have their own unique qualities! Asian eggplant are especially tender, thin-skinned, and not seedy. 

  • Eggplant is all about the high heat.  This can be accomplished by roasting in a hot oven, cut side down until you get a really good sear and then flipping to blister the skin side. Try slicing lengthwise into 1/2 inch slices and roasting or grilling until charred and then topping with a delicious tahini sauce, miso, pesto or chimichurri. We also love baba ganoush, ratatouille, marinated eggplant sandwiches, or throwing eggplant into tomato sauces to enhance the umami flavors.

  • Make jars of flavorful caponata!

  • Even if you think you are not an eggplant person - give it a try,  eggplant is way more versatile than you think!
