Also known as "green onions" or "bunching onions," scallions have a mild onion flavor and are delicious raw or cooked.

Scallions is one of the most versatile vegetables to cook with. You can cook with them by using them in place of onions, you can put them in sauces, grill them, or use them as a garnish on nearly any dish to bring it up to the next level.

Cut off roots and slice thinly on a diagonal all the way up.

Slice the green & white parts thinly for ginger scallion sauce, curries, grain bowls, or vegetable fried rice

You can macerate the white part in vinegar or lemon juice before using scallions raw to cut through the raw allium flavor.

Use the green part in place of chives.

To store: fill a sturdy glass with 1” of water and place roots of scallions in the water. You can store on kitchen counter like this for several days, replacing water daily. Otherwise store in plastic bag in the refrigerator.
