Carrots
Season: Late Spring, Summer, Fall
Variety: Napoli, Scarlet Nantes, Bolero

STORAGE: Ideal temp: 35°F. Remove greens before storage - even if you plan to use them. Store roots and greens separately, otherwise they will draw moisture away from one another and reduce storage. Store carrots in a sealed plastic bag in your fridge, ideally in the crisper drawer. Without plastic carrots will dehydrate and go limp prematurely. Storage life (varies with time of year and variety): 30 - 90 days. Longest storage life comes with fall harvested carrots. If using the greens, use them within 7-10 days.

CULINARY TIPS

Turn greens into pesto (see recipe below) or use as garnish in place of parsley.

Shred into salads, roast, or slice into long sticks for snacks! Add to the base of any soup with celery and onions to create the most delicious base.
